Laboratory of Wine Microbiology
The functions of the laboratory of wine microbiology are to
analyze scientifically the various phenomena that occur during
the wine-making process with the aim of producing wines of high
quality. Special emphasis is placed on studying biological and
fermentation aspects of microorganisms such as yeasts and lactobacilli
and the selection of industrial microbial strains. In addition,
the laboratory is involved in research on the creation of excellent
new wine yeasts through methods such as genetic recombination
and cell-fusion of yeasts.
